Pork Chops with Apple Cider Pan Sauce

Ingredients
- 2 ea pork chops, bone-in
- 2 T kosher salt
- 1 T sugar
- 4 T butter
- 2 T shallots, minced
- 2 t thyme, minced
- 3/4 C apple cider
- 1/2 t apple cider vinegar
- 2 t parsley, minced
Instructions
- Combine the salt and sugar, then pat the chops dry and coat with the mixture. Refrigerate 8 to 24 hours.
- Season the chops with pepper, then roast at 250 until chops are 100 - 110 deg for medium-rare, or 110 - 120 for medium.
- Saute the shallot and thyme in 1 T butter until softened. Stir in the apple cider and simmer until slightly reduced. Whisk in the vinegar and remaining 3 T butter. Season to taste, stir in the parsley.
- Plate the chops, dress, and serve.
