Pork Chops with Apple Cider Pan Sauce

Instructions

  1. Combine the salt and sugar, then pat the chops dry and coat with the mixture. Refrigerate 8 to 24 hours.
  2. Season the chops with pepper, then roast at 250 until chops are 100 - 110 deg for medium-rare, or 110 - 120 for medium.
  3. Saute the shallot and thyme in 1 T butter until softened. Stir in the apple cider and simmer until slightly reduced. Whisk in the vinegar and remaining 3 T butter. Season to taste, stir in the parsley.
  4. Plate the chops, dress, and serve.
